Have you watched Heroic Age? It was a nice space opera mech thingy..I liked it. Since you like gundam I also suggest watching Tenchi Muyo War on Geminar since it does involve some mech things...

That's a really huge list that I haven't even seen most of but here's some you missed and will definitely want to watch.

One Piece: Arguable the best anime hands down in my opinion, I've seen a lot but nothing comes close to this except for maybe Dragon Ball. http://www1.watchop.com/

Kingdom: During the time of Ancient China and the famous warring states, two young peasants promise each other to become famous generals known across all the land. It's really interesting and quite addicting once you get through midway first season and they are already on Season 2. http://www.animeget.com/kingdom-anime

The Last Airbender: Pretty obvious choice and incredible anime. Self-explanatory. http://www.animeget.com/avatar-the-last-airbender-anime

Cowboy Bebop: Going back to the 90's here, Cowboy Bebop is a classic among animes, must see! http://www.animeget.com/cowboy-bebop-anime

Give Monster a try if you have some fee time. http://www.imdb.com/title/tt0434706/ IMBD gives it a 8.6! Gunslinger Girl is one of my favorites of all time.

Definitely Hunter x Hunter.
Naruto Shippuden gets better if you hang in there I've seen every episode even the fillers and its getting better. I hate the flashback episodes though. It is in my opinion better than the first part of the series.

Berserk wasn't on your list. If you haven't read the manga or watched the anime, then now would be a good time to start.
