If you are new to the whole concept of "Modding" you have a long road ahead. Fortunately for you this site is your shortcut.
What are you exactly trying to learn?

I am trying to figure out what programs and stuff I will even need before I start modding. I have looked through so many threads and it has not answered my question. After I get the programs I will look through the threads again to figure out how to use them. Then I will need to figure out how to get it from my computer to my Xbox360 so that I will be able to use it.

There is a lot of programs but a good base is Modio, Horizon, Xbox tools. Gonna be a pain at first but you'll get the hang of it, also to move from box to comp you can use a usb key formatted by the xbox or a transfer cable given when you get a new box or upgraded HDD for one. Hope this helps you out happy modding.

Like others have said, there's are lots of tutorials all over the site. Most just involve you moving your save file from your Xbox 360 - My Xbox/Memory/Game/Move Save Game - onto a USB flash drive (Most places like Walmart/London Drugs, etcetera, carry them). From there you would use programs like Modio to take it off the USB. Which is where the programs you find on this site, can read, and modify to your liking. More health, more money, more weapons, different levels, etcetera. You can also find game saves directly for the game, that way all you have to do is move it onto your USB and use it on your Xbox from there. Good luck!

You have no idea how grateful I am for all the help you are giving me. Am I able to find Modio on this website so I will be able to use it or is there a certain place I have to go to get it?

Download Modio (http://www.wupload.com/file/46501092/Modio_3.0.zip) from wupload.com
Download Horizon (http://www.xboxmb.com/download/?ref=xmb&h=aHR0cDovL3d3dy54Ym94bWIuY29tLw==) from xboxmb.com

Yeah, Modio's my personal favorite, though Horizon is extremely useful to have lying around. Anything with a built-in hex editor and rehasher/resigner are great choices for beginners, because those are the things that are absolutely necessary to hack 360 saves (rehashers/resigners especially).
Now, by hacking, do you mean using a save editor program, or manually hacking the save programming yourself (hex editing)?

This thread seems relevant to my current dilemma, but someone said in one of mine that with the current editor you can create a ng save. This implies that you can create a save from scratch and upload it to your game data. I intend on doing this for Dark Souls so what would the ideal program be for me? I would think that manual hex editing is beyond what I am currently capable of doing. I plan on modding stats and equipment. Any other info would be great too... Like how not to get banned if you do this etc... Links are fine with me?
Edit: I went searching for a known editor and found StB. I like this... Simple and sleek. I am still learning though.

Both are great but I prefer 360revolution nothing fancy like horizon but it gets the job done.

It isn't possible to create a save from scratch, even with hex knowledge. That is, unless there's some program that I haven't heard about.
With games that never communicate with the internet, getting banned isn't gonna happen (how would they know you're hacking?). However, if you're playing an online game, the best chance of not getting banned is to hack responsibly and cautiously. There really isn't any sure-fire way to keep from getting banned, just make sure you don't go overboard with your mods, and hope you don't have bad enough luck for it to happen. More often than not, the ones who get banned for hacking are the ones that flaunt it all over Xbox LIVE (usually offering to hack other people's accounts for them), so as long as you stay discrete and responsible, you ought to be okay.
Hex editing may seem difficult at first glance (when I started with Sega Genesis hacking, I felt in over my head), it really isn't that hard if you're willing to take the time to learn it. More than anything, it just means you have to relearn how to count (instead of 1-10, it's now 1-16) and learn how to Ctrl+F (if you don't know already). That's it, basic counting and Ctrl+F. There are a few really nice tutorials as well, like here: http://www.360haven.com/forums/showthread.php?1588-Introduction-to-Hexing-Programming-and-Game-Modding.
