I can confirm that the orange soapstone signs are saved in your file. I did managed to edit the location and text of it. Now the fun begins of trying to find unused strings. :P this is going to be a pain in the butt.
As for the items not working once added to the inventory, if this happens then just unequip everything and requip it. It will readjust the inventory in a way that will make the new item work.
:P my structure file has hit a snag due to the one section of the file that changes length without a known modifier. Once i can get past that i can get to things like the soapstone locations. After i do some research on the strings avalialbe to the stones i will start looking into the hostile/dead npc situation. Wonder if i can trigger every npc in the game to hate me XD.

That's all I have for now. I'm thinking of re-starting my cleric-type in light of what happened with the magic achievement on my mage.
Some notes, the Iaito is the only one that there seemed to be another listing with the same durability, based on placement in the file though, I think the one I have put up there is correct (000000000007A4A9 if it isn't). Usually when that comes up I can tell by the number if it's in the right neighborhood (near weapons of same type), that method was a wash here.. I'm guessing some other katana had the same damage in my bottomless chest.
General notes: Server is a large curved sword, Sanctus is a shield, they don't call the meat cleaver "meat cleaver" in this one, and the large club is the "dropped" one - the found one (great club) is elsewhere in blight town. I took the Longsword from the top of the post with the list of hex values, it's used in the example of making a weapon crystal, but not actually listed on the page... XD
I tried to reduce the weapons to base where possible, but they won't let you go lower than +5. With boss soul weapons, that reduces it to the previous +10 weapon, so... that's what I got. I suppose with the math bit they note in first post, you could probably get those to basic? +5 is good though, you can go anywhere from there.

Also, on the current list, several of the missing things are found, they just have different translations:

so far i cant seem to find any unused strings. Im guessing the soapstone spots in the tutorial area are scripted and thusthere might not be any hidden strings. Editing the sign is kinda pointless but it is good to know. Gestures kinda falls under the same area, good to know but pointless, when there is nothing hidden and unused.
Also seems other player's signs save in your world. I just wonder if other signs save.
Edit: Seems i just edited my signs rating. Seems the little skull icon changes based on th rating it has.

They are in the structure file i posted for hex workshop. They are the very last entries.
:P also side note. Lots of flags get triggered for hurting one blacksmith.
Edit: Well the black smith stopped attacking me.... because he is now gone. No idea what i did to make him "dead"
Edit2: Ok i think i figured it out now. There are a few flags at work here. I managed to get the blacksmith back but i noticed a few odditites. Seems that when he was attacked it triggered a few environmetnal flags as well. :P his anvil is tipped over and the sword he was holding is gone.
It seems when you attack an npc, a flag is triggered as "attacked" but still alive. When this flag is triggered the npc itself dissepears in a sense. There is another flag that gets triggered that i think deals with if the agressive version will spawn or not. I havent tested it yet but i think a third flag will trigger when i kill said agressive npc and mark him as completely dead and thus paying sins wont reverse it.
Edit3: Is it normal to have 2 onion knights at the firelink bonfire? Editing flags caused them to spawn.
