You can add monsters by going into the Monster Editor and change their stats. Just don't Max stats them all b/c they will kill anything in 1 hit. You can add DLC monsters only if you purchased them so yea just edit the DLC monster's stats and you will have it in your list after you click save. To beat Gilgamesh just increase your character's stats to withstand him in battle.
